Pink Piping Wedding Cake

This cake was made for a wedding celebration at Leez Priory In Essex.

My clients wanted a piped design including brush embroidery flowers and sugar blossoms.

Here is a rough sketch of how I saw the cake looking.

The cake consisted of one fruit cake tier and the remaining tiers were dummies.

I began by covering the dummy tiers with white fondant icing.

I then drew my piping design on a strip of baking parchment which was the same length as the circumference of the cake and the same depth as the side of the cake.

I then wrapped the parchment around the cake and secured it in place.

I used a scrolling tool to go over the pattern which transferred it onto the cake.

I really enjoyed doing the piping on the cake. It is actually quite therapeutic to sit and steadily pipe the pattern.

The next thing was the brush embroidered flowers which are done by piping the outline of the flowers and then using a fine, damp brush to drag in the outline inwards which creates a brush mark.

The cake was part assembled before delivery and then put together in situ. I had to battle with a few wasps while I was doing this. I think they can smell sugar from miles away!

While I was doing my bit the staff at Leez priory were putting out the seating for the ceremony and I noticed that the bows on the chairs matched the ribbon I had chosen really well.

The venue was lovely and the cake looked beautiful.
