Naming Ceremony Cake

I love this cake. It is so pretty and delicate without using baby colours. My client did not want a pink cake so we discussed the colours and she really liked the red and blue which she had seen on another cake.

The cake consists of two tiers of vanilla sponge cake filled and covered with vanilla butter cream. The bottom tier is a shallow one which has one layer of sponge and the top tier is a regular sized two sponge layer.

I covered both tiers with marzipan and fondant icing which I had coloured using eucalyptus colouring paste ( have to make sure I don’t get carried away with this colour - I love it!). I then attached the bottom tier to the cake board with royal icing and the top tier to the bottom tier.

Dowels (plastic supports) were inserted into the bottom tier and a stiff cake cake was placed on top of the dowels before putting the top tier in place.

I attached edible ribbon around the base of each tier. The ribbon was cut from rolled fondant with a small amount of gum tragacanth added (see jewel wedding cake). I then used a tool which is a little wheel with a serrated edge which makes indents in the fondant to create a ribbon effect.

I made the flowers using flower paste. This is a doughy type mixture similar to fondant but is more elastic, pliable and maintains the shape of cut pieces such as petals. Once they had all set I attached them to the cake with little dots of royal icing.

The wording on the top of the cake was done with piped royal icing. The name was done using letters cut from fondant icing. I transferred the design onto tracing paper and then placed it over my rolled fondant. Once the letters were cut out I rounded the edges to soften them. I attached the letters using a small brush and a very small amount of water.

The colours of the flowers are perfect with the rich ivory fondant covering.

Amanda made this wonderful cake for our daughters naming ceremony; we were so pleased with the results. The look was fabulous, stylish, original and done so skilfully, just what we wanted. Amanda was great at suggesting things and was really professional through out. What’s more the cake was truly delicious. Yummm!
