This two tiered gooey chocolate cake was made for a birthday celebration. Both tiers were chocolate cake.

I covered both tiers with chocolate marzipan. Once that had dried out a little I attached the bottom tier to the cake board. I rolled out strips of dark brown fondant and then folded the it to create rolls around the tier.

Having inserted supporting dowels into the bottom tier (see ribbon and floral wedding cake) I placed the top tier onto it and created the same effect with ivory fondant.

Once the layers of fondant had set sufficiently I put marshmallows all around the top of the bottom tier.

The happy birthday greeting was done by cutting out the letter from thinly rolled maroon fondant. I added gum tragacanth to this fondant because I wanted the letters to set hard (see jewel wedding cake).

While the letters were still soft I threaded fine gold coloured wire through the centre of each letter. I then left the letters to harden.

I arranged feathers and pom poms and stuck them into flower pics inserted around the top of the cake. These are plastic tubes which are open at one end and closed at the other with a pointed, serrated edge which can be hygienically stuck into a cake.

Any non edible objects can then be inserted into the pics without making contact with the cake itself. I used brown flower wires to create curls springing out of the top of the cake. These were made by wrapping the wires around a pencil.

Finally I twisted the letter wires to give them some shape and movement and inserted them into pics.

This cake was really fun and frivolus.
