Jewel & Rose Wedding Cake

This cake was made for a wedding reception held in London.
My client had seen a similar cake but wanted different coloured flowers and edible jewels on her cake.

The cake consists of three tiers of vanilla sponge cake filled with vanilla butter cream and strawberry conserve.

The cakes were separated with dummy tiers covered with pale pink satin.
There are approximately 350 chocolate and fondant roses on the cake along with edible diamonds and edible silver leaves.
Edible sugar diamonds are a fantastic way of adding sparkle that does not have to be removed before serving.
The separators between the tiers make the cake stand very tall and this was needed on this occasion because the room in which the reception was held was very large with extremely high ceilings.
The colour combination of the roses works really well.
