The range of decorations and effects that can be created on cakes now is staggering and these scrummy little sugar diamonds are yet another product that can help achieve a visual (and edible) feast.

Squires Kitchen has produced a range of edible diamonds in various sizes that look fab.

Previously the only way of having diamonds or jewels on a wedding cake was to have real/glass ones or to add dots of clear or coloured piping gel.

Real ones have to be removed before serving and the cake has to be displayed where little fingers can’t get to it.

Piping gel is a very effective way of creating jewels but it is not possible to give it the definition that these edible diamonds have.

It is also possible to get different coloured edible diamonds.

I found a couple of American sites selling sugar gems which come in various shapes.

When I had a look at a couple of related forums a few people said they had ordered them and the quality was not as good as the picture.

I also read on one wedding magazine forum that sugar diamonds are pretty hard and may be a choking hazard for small children.
