Diamante Wedding cake

Evening all and a very happy new year to you.
The chocs and sweets are all gone except the usual suspects that no one wants, the novelty of new pressies has worn off and the packet of indigestion tablets is empty so I thought I would write a post as I have around 20 cakes to get onto my blog (must try harder in 2011).

This was a large wedding cake with two deep tiers and two standard sized tiers.
The deep tiers were overlaid with wispy flowers and leaves. They had a lovely floaty look to them.
I made the flowers by rolling out the sugarpaste (with added gum tragacanth) thinly and using various cutters to create different style/sized flowers.
This was the most time consuming part of the decoration as I had to use at least two cutters for each flower to create the look I wanted and many of the flowers had smaller blossoms in the centre.
Also, because I frilled the edges of the petals before applying them I did not cut out too many flowers at one time so that they would not be hanging around and drying out.
I can usually recall what I am listening to/watching when decorating a cake - each one has it’s own soundtrack. I can’t remember what it was for this one though. Maybe I was having a bit of peace and quiet (don’t remember Dexter being away!)

Talking of which it is pretty quiet right now as he is still up with his nanny and grand dad. Being spoiled, annoying his grand dad and eating way too much ice cream (only 7 year olds eat this when the temperature is 0). When my mum in law asked when we wanted to pick him up I suggested his 16th birthday.
It is very odd without him and my hubby is off up north tomorrow to fetch him.

I used a ball tool to frill the edges of the flowers and leaves so that they would curl up a little instead of laying flat on the surface of the cake.
This cake also had diamante trim on two of the tiers and on the base of the cake. Diamante is perfect for a Winter wedding as it twinkles really brightly and each individual stone picks up different colours.
I put the diamante trim over a pale silver/grey ribbon which looked great.
The top of the cake was decorated with a rose topper.

We just wanted to send you an e-mail to thank you for our amazing wedding cake, you certainly exceeded our expectations! It was absolutley perfect and such a great copy of the one in the picture we gave you. All our friends and family also commented on how amazing it was. We both had a great day and are now just trying to get back into a routine after 4 weeks in Canada!
