Daisy Wedding Cake

This wedding cake was made for a summer wedding with the reception in a marquee decorated with daisies and some wild flowers.
The main colour on the cake is pale eucalyptus. It has pale yellow and white daisies and brush embroidery decorations.
The sponge was moist lemon with lemon butter cream. I covered each tier with marzipan and pale eucalyptus fondant icing.

I started by covering the top tier with embossed roses. Once these had all hardened I attached the top tier to the bottom tier with piped royal icing.
Next I made the large daisies. I used flower paste for this to achieve fine petals. There are lots of flower pastes on the market and it has been a case of experimenting to find out which one works best for me and the job in hand.
I used a large daisy cutter and placed the flowers in apple trays until they had hardened. I used silicone flower centre moulds to create the centres of the daisies.
The next thing was the white roses around the bottom tier. I used a foam rose shaped embosser. I pushed the embosser into soft rolled out, white fondant and then cut out the roses. I stuck the roses around the side of the cake leaving gaps between them.

I wanted the roses to sit a little higher than the top of the tier to create a channel that flowers could sit in. I put small lumps of foam behind the cut out flowers until they had hardened.
I finished the cut out roses with brush embroidery. This is done by piping lines of royal icing to mark out the details of the design. While the piping is still soft a slightly damp small brush is placed on the piping line and pulled away from it, in this case towards the centre of the flower. It is important that the brush is not too wet or too dry.
If it is too dry it will not pull away cleanly. If it is too wet it will cause the icing to run and will not leave any definition in the design.
Once all the brush embroidery was hard I dusted the roses with pearl white lustre dust.
Next I placed the daisies around the top of the bottom tier. and on the top of the cake.
I used a deep cake board for this cake which was decorated with white and lemon ribbon.
