Cupcake Birthday Cake

Cupcakes are becoming more popular for celebration cakes and look good with glitzy and flamboyant designs.
In this case my client wanted a cake for her 30th birthday. She was having a party and wanted something a little different. She also wanted a small cake included that she could serve to close family.
I began by preparing the dummies for the cakes to sit on. It is possible to hire or buy metal stands for cupcakes but my client opted for the design using fondant covered cake dummies.
I covered two shallow dummies (1.5 ” high) with white fondant icing and left them to harden. I then covered a 22″ cake board with pale pink fondant icing and left that to harden also.
The small cake was chocolate sponge filled and covered with chocolate ganache. I then covered this cake with chocolate marzipan and pale pink fondant icing.


I made lots of different sized/coloured stars and flowers with fondant and left them to set hard. I did not use a hardening agent in this case because the shapes were stuck into butter cream.
When the fondant on the small cake had hardened sufficiently I put the decoration on it. I cut out a large number 30 using from white fondant icing and attached it to the cake with a little water on a small brush. I painted it with edible gold paint before it hardened.
I have found that gold and pearlescant colours are more vibrant and consistent if they are painted on before the fondant has had a chance to harden.
I then added lots of different coloured stars and flowers.
Next I baked the cupcakes which filled the whole kitchen. I baked 30 chocolate cupcakes and 30 vanilla cupcakes. Once cooled I added the swirls of butter cream. I coloured it very pale pink and used a savoy piping tube (this a very large ended tube which allows lots of the piped substance through to create large swirls).
When the butter cream had set a little I added the hardened fondant shapes including number 30. I stuck these into the butter cream swirls the way you would stick a wafer into ice cream. Lastly I sprinkled a little edible gold glitter all over of the cupcakes (I am still finding little bits of glitter now!)

This birthday cake looked great and I think it works well with the covered cake dummies as a stand.

My cake was amazing, everyone said how lovely it was it was a real centrepiece and tasted wonderful.
My favourite was the chocolate but i had the vanilla cupcakes for those who arent such a fan.
Amanda was great, she met me first to disucss what i wanted and then came up with this FAB design.
Will definately ask her to do another cake for me.
