Cupcake 30th Cake

This cake is lots of scrummy chocolate and vanilla sponge cupcakes with a chocolate cake to top them off.

Cupcakes are great for all us grown ups. We get to eat them legitimately without having to steal them from party bags or stealth tactics at kids birthday parties.
These are even better than the kiddie version as they have big swirls of pink butter cream on top - much more than you would get at a party for 5 year olds.

Just in case the cupcakes did not provide enough chocolate content my client decided very wisely to have a chocolate cake to crown the cupcakes.
The top cake was covered in chocolate marzipan and then pale pink fondant icing.
I wanted the butterflies to cascade around the side of the top cake and then have different sized butterflies on the cupcakes.
The butterflies were made from fondant with gum tragacanth added.
Gum tragacanth is one of the hundreds of sugarcraft products that means us sugarcrafters can make ever more elaborate designs.
It is a powder which is added to fondant icing to make it more elastic and pliable
It enables fondant to harden which is desirable when modelling or flower making.

I made butterflies in pink, gold and claret and stuck them to the butter cream once they had hardened.
I also made lots of gold fondant number 30’s and stuck them into the butter cream of the choccy cupcakes.

If I was having a mix of chocolate and vanilla cakes I would definitely want to know where the chocolate ones were and would think about whether to tell my party guests.
The cupcake stand was an alternative to the widely used perspex or metal stands.
I made it with boards covered in pale pink fondant and polystyrene dummies between the boards covered with pale gold organza.
My client was really pleased with her cake as was the recipient.
I love the big swirls and gold with pink and claret.

The boards go up in 2″ sizes 16, 14, 12, 10 then an 8″ board with the top 6″ cake sitting on that.

I used muffin cases and also the baking tray is for muffins. I think they look like the grown up version of fairy cakes.
