Chocolate Rose Birthday Cake

This chocolate birthday cake was covered with rich chocolate ganache and then covered with roses and blossom flowers in fondant icing.

I made the rose petals by rolling out balls of coloured fondant and then making them into tear drop shapes. Then I placed them inside a plastic bag and squashed them with my thumb. This created a petal shape with a raised ridge at the top of the petal.

If I was making wired flowers for a display I would roll out very thin sections of flower paste and then using a cutter and tools to frill out the edges of the petals slightly. I wanted these flowers to be a bit chunkier because I felt they would suit the ganache covering and the pastel shades would stop them being too imposing on the overall design.
