Blue Ribbon Wedding Cake

This cake was elegant in design and although it had hundreds ( I remember each and every one!) of flowers it retains a lovely simplicity.

I did not make the flowers in advance as I wanted to apply them directly to the cake. I began by covering and assembling the tiers.

I used my very handy plunger cutters in various sizes.

For anyone who has not used a plunger cutter it does what it says on the packet.

You roll out your sugarpaste and then cut the flower.

The cutter has a spring loaded plunger which you then press to push the cut flower out onto the surface you are decorating.

This is much quicker than cutting each flower and then having to put it in place.

So I put on the box set of Phoenix Nights and started the flowers.

If you are thinking about what tools/cutters to get I would recommend a set of these.

The design of the cake has a carpet of flowers on the top and bottom of the cake which gradually spreads out to produce scattered smaller flowers.

I added some piped centres to the flowers to give them a more realistic look.

With hundreds of dots to pipe I decided to catch on on some history podcasts.

My client gave me a swatch of colour for the blue ribbon.

When it comes to matching ribbon colours I get as closer match as possible.

Of the blue shades close to the swatch I decided on the sheer ribbon with an overlaid narrow ivory ribbon with a dinky bow tied in the centre.

The blue ribbon provides a focal point on the cake and its sharp lines are a great contrast to the random nature of the flowers.
