100th Birthday Cake

As the title says this cake was made for a 100th birthday celebration. So the birthday lady (really can’t say girl when someone has reached 100) would have had a telegram along with her cake!

I am on a roll with these posts - two yesterday on a Sunday! and another one today. Of course there is every possibility that this roll may end after posting this.

My client wanted a cake that was ladylike, elegant and pretty.

I decided on flowers in pastel shades and some delicate blossoms and sugarpaste stems around the side of the cake.

In this case the stems were not piped. I decided to make them with sugarpaste and used my clay gun to create the lengths of sugarpaste in the shape that I wanted.

I have just ordered a new clay extruder from America. It looks fantastic and has a very strong spring action which will push large quantities of clay through whatever shape disc I use.

Obviously I am not planning on using clay but as sugarpaste is much softer than clay it should be a dream to use. Can’t wait to get it!

I used a scribing tool to mark the shape of the stems on the sugarpaste and then attched them using a very small amount of edible glue. It is important to use a very fine brush without overloading it with glue.

If there is too mcuh glue on the surface of the sugarpaste it will splodge (for want of a better word) out beneath the stems when they are pressed into place. This will cause a shiny stain on the sugarpaste which is very difficult if not impossible to remove.

If this does happen you can always pop a little blossom over the stain.

Once all the stems were attached I stuck little blossoms randomly on them in the same colours as the cluster of roses on top of the cake.

The colours and style of the cake were beautiful and perfect for a lady celebrating her 100th birthday.

Mum truly had a wonderful day. The cake had to be divided into approximately 60 pieces as so many extra people came, especially staff from the home, who came in on their day off! So your instructions were invaluable. I loved the clean, elegant lines of the cake. I\’m so pleased to see it before it was cut as I totally forgot to take a photo. I will add it to the album. Out of interest the Queen no longer sends a telegram - it is a specially delivered card with a picture of her on the front and signed by her inside following a suitable appropriate message of congratulations. As Mum is a great fan of Her Majesty, she was thrilled!
